In an age where meal kits and subscription meal delivery services are the norm, it seems only natural that one of the oldest public farmers markets in the United States jumps on board. Dubbed the Pike Box CSA (short for "community-supported agriculture), the program is put on by Pike Place Market to offer fresh, Washington-grown produce to subscribers.

Not so at Greenhorn Creek Guest Ranch. Located in northern California near the Plumas National Forest, this 600-acre dude ranch welcomes families to live out their horseback riding dreams every summer. Our week-long Big Island trip for the Hawaii sustainability documentary continues with a stop at Hirabara Farms. This 3-acre parcel sits at 2,900 feet above sea level in Waimea. It is owned by farmers Kurt and Pam Hirabara, and together they produce 13 varieties of baby lettuce and about 2,400 pounds each week exclusively for island chefs.
